Zuchini Egg Fry
Hello lovelies,
Here is another versatile Keto recipe that can be paired up with other Keto dishes like Low carb tortilla , or cauli rice Pilaf/Pulao or toasted Keto Bread.
Ingredients:
- 2 Boiled Eggs
- Onion medium sized chopped 1
- Tomato small size chopped 1
- Garlic 5 Pods
- Ginger garlic paste 1/2 spoon
- Zucchini cut length wise 1
- turmeric powder 1/2 spoon
- chilli powder 2 spoon
- Salt to taste
- Garam masala 1 spoon
- Coconut oil 2 spoon
- Jeera/Cumin seeds 1 spoon
- Water 1/2 cup
- Mustard seeds 1/2 spoon (Optional)
Steps:
- Heat a pan add oil
- add Jeera and mustard seeds. Wait for them to splutter.
- Add chopped onions and fry until transparent add garlic pods and ginger garlic paste.
- Fry until the raw smell goes off
- Add chopped tomatoes and fry until mushy.
- Add turmeric powder, chilli powder, salt and fry for 2 mins or until the masala is mixed well
- Add zucchini and fry for 2 minutes and add 1/2 cup of water
- close the pan with a lid and let it cook.
- Once the water is cooked and the gravy is thick enough, add garam masala powder and stir in for 2 minutes.
- Slit the boiled eggs in to half and add to the gravy and cover the eggs with gravy and toss lightly for 2 mins.
Zucchini egg fry is ready.
