Zuchini Egg Fry



Hello lovelies,

Here is another versatile Keto recipe that can be paired up with other Keto dishes like Low carb tortilla , or cauli rice Pilaf/Pulao or toasted Keto Bread.



Ingredients:


  1. 2 Boiled Eggs
  2. Onion medium sized chopped 1
  3. Tomato small size chopped 1
  4. Garlic 5 Pods
  5. Ginger garlic paste 1/2 spoon
  6. Zucchini cut length wise 1
  7. turmeric powder 1/2 spoon
  8. chilli powder 2 spoon
  9. Salt to taste
  10. Garam masala 1 spoon
  11. Coconut oil 2 spoon
  12. Jeera/Cumin seeds 1 spoon
  13. Water 1/2 cup
  14. Mustard seeds 1/2 spoon (Optional)

Steps:

  • Heat a pan add oil
  • add Jeera and mustard seeds. Wait for them to splutter.
  • Add chopped onions and fry until transparent add garlic pods and ginger garlic paste.
  • Fry until the raw smell goes off
  • Add chopped tomatoes and fry until mushy.
  • Add turmeric powder, chilli powder, salt and fry for 2 mins or until the masala is mixed well
  • Add zucchini and fry for 2 minutes and add 1/2 cup of water
  • close the pan with a lid and let it cook.
  • Once the water is cooked and the gravy is thick enough, add garam masala powder and stir in for 2 minutes.
  • Slit the boiled eggs in to half and add to the gravy and cover the eggs with gravy and toss lightly for 2 mins.

Zucchini egg fry is ready.
