Sea food Penang curry 


Penang curry

Ingredients:

Prawns 200g
Squid 100g
2 cups coconut milk
4 tbsps curry paste
2 tbsps Palm sugar
1 red chilli
2 tbsps coconut oil


Curry paste

15 dried red chiilis soaked in hot water for 2 hours
1/4 cup roasted peanuts
Chopped ginger 3 tbsps
3 shallots/small onions medium sized
3 garlic cloves
dried lemon grass 2 inch long stick soaked in hot water for 1 hour
(if fresh lemon grass is available - 1 stem)
1 tbsp cumin powder
1 tbsp coriander powder
1 tbsp groundnut oil

blend everything except oil to a fine paste. 
Add the oil at the end,scrap the sides and blend.

Steps:

In a hot wok, add coconut oil once the oil is warm enough add chopped red chilli.
When the chillis are fried,add the curry paste.
Fry the paste till it seperates from oil.
Add the coconut milk and let it boil for 5 minutes
Add the prawns and squid and let them boil for 5 minutes or until cooked.
Add the palm sugar and lemon juice to garnish and serve.
