Quick and Easy Aviyal



Hello all,

Here is the quick and easy way of making an Aviyal. This is a recipe inspired from original Kerala style aviyal. It is really healthy and delicious too.

Ingredients:


Vegetables:

Carrots - 2 (chopped length wise)
Beans - 4 (chopped roughly)
Potatoes - 2 Medium size (Remove the skin and cut in to cubes)
Egg plant - 3 (chopped in to cubes)
Drumstick - 1 (chopped)
Raw banana -1 (Remove skin and cut in to cubes)

Spices:

Turmeric powder - 1tbsp
Salt - to taste

For the paste:

Coconut - 1/2 (grated)
Green chillies - 3
Fennel seeds - 1 tbsp

To Stir in:

Water - required
Curd - 1 cup

For tadka:

Coconut oil - 1 tbsp
Mustard seeds - 1/2 tbsp
Curry leaves - 2 strips
Urad dhal -1 tbsp                                                                                               

Steps:


  1. Grind the ingredients mentioned under for the paste in to a coarse paste.
  2. In a pressure cooker, mix all the Vegetables,Turmeric powder, Salt and water. Cook for 1 whistle.
  3. Once the pressure is released,  bring the cooker back to simmer flame add in the paste and let it boil for 5 mins. Check the salt and add if required.
  4. Add curd and stir in lightly.
  5. Make the tadka, pour in and stir in lightly.Switch off the flame and serve.

Ps: Raw mangoes,Ash gourd can also be added.
