Cream of spinach Soup


As part of Keto/Low carb diet you should intake lots and loads of greens so that you get enough minerals. One such minerals rich greens is Spinach/Palak leaves and it is easily available in chennai. But the sad part there aren't much options with spinach except Palak Paneer, or a  stirfry or add them in chicken curry to make spinach chicken curry. I was craving for a thick creamy soup for a long time and got this idea. It tasted super yum so i decided to share it in my blog.



Here goes the way I make "Cream of Spinach soup".

There is no quantity measure for this recepie.

Steps:


  • I cut and wash spinach then drop them in boiling water with a pinch of salt. 
  • Switching off the stove once the spinach goes tender i let them rest for sometime.
  • Once it gets cooled down, I blended them in a mixer with some salt and transfer in a bowl.

      For the garnishing,
      I roasted some vertically slit garlic pods in coconut oil and added them in the soup.
      then i added a dash of fresh cream and a some butter.




Gosh!!! that look gorgeous and tastes really yummy too.

  • This food is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Niacin and Zinc, and a very good source of Dietary Fiber, Protein, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Calcium, Iron, Magnesium, Phosphorus, Potassium, Copper and Manganese.
  • Spinach is high in Sodium,so please consider that.
